  • With an arching goal of maintaining or improving nutrition and quality outcomes, my consulting guidance includes emulsification, preservation, storage and transfer safety, and prep work strategies. Not everyone on your team will have your level of experience, that is okay because we can make it easier. Production consistency can be tricky, I can evaluate and advise you to streamline our well-defined process. We can work together to develop your product in the kitchen or the lab!

  • I will evaluate your menu to provide recommendations. This may include, recipe analysis, basic dietetic calculations for caloric content, editing, and writing for publication.
    -Nutrition advice to improve your menu is a separate service. I work directly with chefs to meet food science optimization and the diversity of needs for events or venues.

  • This is not an absolute because I am not a food chemistry lab. If you want a bomb-calorimeter for your kitchen, order one and I will help you.

    I. Calculate macronutrient distribution in grams, calories, and percentage of meal based upon your recipes.

    II. Approximation of key micronutrients.

  • I. If you are disappointed with the results of the dietetics calculations of your recipes and need guidance on improving nutritional value, this is next level of service.

    II. Many people are on special diets or have medically necessary restrictions. - Certain ingredients can be a liability. Designing and modifying recipes to meet medical restrictions is a special service. Dysphagia or other feeding difficulties is a tough reality.

    III. Language to support menu concepts are a good marketing strategy. Nutritionist-approved is the ultimate stamp!
